Mushroom & Lentil Bolognese

Rich, flavoursome and really simple, this vegan-twist on the traditional Italian Bolognese is a staple in our household. We absolutely love the richness from the wine and the protein-packed lentils give the recipe a real hearty taste.

Honestly, you’d be surprised just how often we reach for this recipe after a long day at work! Apart from the pasta, you can cook everything in one pan, and we usually throw in some grated vegan cheese when we combine the sauce with the pasta at the end.   • oil (for frying)
  • 1 garlic chopped
  • 2 celery chopped
  • 1 white onion chopped
  • 2 carrots chopped

  • 1 400g tin chopped tomatoes
  • 1 400g tin green lentils drained

  • 1 tbsp tomato puree
  • 1 tsp salt

  • 100 g vegan cheese grated

Mushroom & Lentil Bolognese
Instructions
  1. Heat a small amount of oil in a frying pan. Once the oil is hot, add the garlic, celery, onion, carrot, rosemary and thyme. Cover with a lid and cook for 15 minutes.
  2. Add the mushrooms and fry for a further 5 minutes.
  3. Add the red wine, tomatoes, lentils, bay leaves, tomato puree and salt and pepper. Cover with a lid and simmer for a further 30 minutes.
  4. Meanwhile, cook the pasta as per packet instructions.
  5. Combine the cooked pasta with the bolognese sauce, along with most of the grated cheese.
  6. Serve with the remaining cheese.

Easy Fajitas

Easy Fajitas

These easy fajitas are simple, colourful and are bursting with spicy flavours! Our recipe gives the vegetables a lovely kick, which balances really well with the sourness from the cashew cream. Some people say the key to an excellent fajita is the tortilla, so try to find good quality tortillas from your local store.

We serve our fajitas with mashed avocado, sour cream and a few cilantro (coriander) leaves.

Makes 6 fajitas.

Ingredients

1 yellow pepper sliced
1 red pepper sliced
1 red onion sliced
300g mushrooms sliced
1 clove garlic diced

Fajita mix:
1 tsp paprika
1 tsp cumin
1/2 tsp salt
1/4 tsp chilli powder
1/4 tsp cayenne pepper
1/4 tsp cinnamon
2 tbsp vegetable oil

For Serving:
1 ripe avocado mashed
1 lime
6 medium tortillas
Small handful of cilantro (coriander)
Cashew sour cream

Easy Fajitas

Method

1. Preheat oven to 220°C.

2. Place the sliced peppers, mushroom and onion on a baking tray and sprinkle with garlic, all the fajita spices and drizzle with the olive oil. Mix everything together with your hands.

3. Place baking tray in the oven for 12-15 minutes until the veg is soft.

4. Meanwhile, mash the avocado and prepare the cashew sour cream.

5. Remove the veg from the oven and start building your fajitas. First spread the mashed avocado on the tortilla, then a serving of veg, followed by a squeeze of lime juice, a drizzle of sour cream and lastly a sprinkle of cilantro (coriander).

Cashew sour cream

Ingredients:
1/2 cup cashews soaked
1/4 cup water
2 tsp vinegar
2 tbsp lemon juice

Method:
1. Soak cashews in hot water for 10 minutes, then drain.
2. Combine all ingredients in a blender until smooth.

Makes 8 burgers.

Ingredients

1 tbsp chia
1 1/4 cups water
1/2 cup bulgur wheat
150g chestnut mushrooms finely diced
2 spring onions sliced
3 garlic cloves chopped
1 1/2 tsp chilli
2 tsp salt
1 tsp pepper
1 cup brazil nuts finely crushed
2 cans kidney beans in water or brine
Handful coriander finely chopped
Handful parsley finely chopped
8 burger buns (suitable for vegans)

For the garnish:
Vegan mayonnaise
Tomato ketchup
Mixed leaves
Red onion
Tomato

Method

1. In a small bowl mix chia seeds with 4 tablespoons of water and set aside for 15 minutes while the seeds expand.

2. Next, cook the bulgur wheat in the remaining water on a medium heat for 10 minutes or until light and fluffy.

3. Meanwhile, fry mushrooms in a little oil for six minutes or until they begin to soften, then add the spring onion, garlic, chilli, salt & pepper and fry for a further 5 minutes.

4. Drain the kidney beans, pour into a large mixing bowl and mash using a potato masher until mostly broken up but leaving some whole beans.

5. Add the chia, mushroom mixture, bulgur wheat, brazil nuts, coriander and parsley to the bowl, and combine using your hands.

6. Once combined, take a handful of the mixture and shape into a burger. Repeat this step for the remaining 7 burgers.

7. Add a little oil to a frying pan on a medium heat. Once hot, add in the burgers and fry on each side for 5-7 minutes or until golden brown.

8. Build each burger using your desired garnishes and condiments. We suggest tomatoes, red onion, lettuce leaves, homemade ketchup and vegan mayo.
