Pulled ‘Pork’ Bagels

Vegan Pulled Pork Mushroom Bagel Recipe

Inspired by our friend Derek Sarno, this bagel uses shredded king oyster mushrooms to create a delicious BBQ-flavoured pulled ‘pork’ which we layer with homemade coleslaw. Epic.

  • You’ll find king oyster mushrooms in some major supermarkets as well as Chinese supermarkets. Alternatively you could use shiitake mushrooms with thick stalks (we’d recommend using twice the amount), or even sliced mushrooms.
  • We use cajun seasoning, but you can use any of your favourite spice mixes: peri-peri, chicken seasoning and even fajita seasoning would all work well.
  • You can make this gluten-free using gluten-free bagels. Make sure you check what BBQ sauce you’re using to be sure this is also gluten-free.

Pulled ‘Pork’ Bagels

Serves: 2 people Prep Time: 20 mins Cooking Time: 35 mins 35 mins
Nutrition facts: 200 calories 20 grams fat

Ingredients

  • 6 king oyster mushrooms, see notes
  • vegetable oil
  • salt + pepper
  • 1.5 tsp cajun seasoning, see notes
  • 3 tbsp BBQ sauce
  • 1/2 red apple, sliced into thin sticks
  • 50g (1.8oz) red cabbage, thinly sliced
  • 50g (1.8oz) white cabbage, thinly sliced
  • 1/2 carrot, thinly sliced into sticks
  • 2 tbsp vegan mayonnaise
  • 2 bagels, or gluten-free bagels
  • wholegrain mustard, for serving
  • sliced gherkin, for serving

Method

  1. Preheat the oven to 200°C fan / 425°F and line a baking tray with baking paper.
  2. Use a fork to shred the king oyster mushrooms into strips like pulled pork and slice the caps. Transfer the shredded mushrooms to the tray with 1 tablespoon of vegetable oil and pinches of salt and pepper. Mix, then bake for 30 minutes, stirring halfway.
  3. Meanwhile combine the apple, red cabbage, white cabbage, carrot, vegan mayonnaise and pinches of salt and pepper in a bowl, then leave to one side.
  4. Remove the shredded mushroom from the oven and add the cajun seasoning and BBQ sauce. Stir to combine, then return to the oven for 5 minutes.
  5. Slice the bagels in half. Spoon some wholegrain mustard on the bottom half, then top with half of the shredded mushroom, some sliced gherkins and half of the coleslaw. Top with the remaining half of the bagel and repeat for the second bagel. Enjoy!
