Vegan Satay Tofu Sandwich Recipe

Crispy tofu pieces coasted in a gorgeous satay sauce and layered in a baguette with smacked cucumber. Who said sandwiches were boring?

  • The tofu we buy is extra-firm and only requires pressing between our hands. Simply remove the tofu from its packaging and squeeze it between the palms of your hands over a sink until most of the water is removed.
  • You can make this gluten-free by using gluten-free bread and tamari.

Tofu Satay Sandwich

Serves: 4 sandwiches Prep Time: 15 minutes Cooking Time: 10-15 minutes 10-15 minutes
Nutrition facts: 200 calories 20 grams fat

Ingredients

  • 1 x 400g / 14.1oz block of firm tofu, pressed
  • 1/2 cup cornflour (cornstarch in the US)
  • vegetable oil
  • 1 medium baguette, or gluten-free bread
  • lettuce, chopped
  • Sriracha

For the satay sauce:

  • 3 tbsp smooth peanut butter
  • 2 tbsp soy sauce, or tamari for gluten-free
  • 1/2 lime, juice only
  • 1 tbsp maple syrup
  • 1/2 thumb of fresh ginger, peeled + minced

For the smacked cucumber

  • 1/2 cucumber
  • 1/2 lime, juice only
  • 1/2 tbsp soy sauce, or tamari for gluten-free
  • 1 tsp chilli oil
  • 1/2 tbsp maple syrup
  • 1 clove garlic, peeled and sliced

Method

  1. Use your fingers to break up the tofu into bite-size pieces and add them to a bowl. Sprinkle the cornflour over the tofu and stir to cover the tofu in the cornflour.
  2. Heat a little vegetable oil in a wok on a high heat. Once hot add the tofu and fry for 10-15 minutes or until golden and crispy.
  3. Meanwhile combine all the satay sauce ingredients in a bowl with 3 tbsp of water. Stir until smooth.
  4. Take your cucumber and smack it with a rolling pin until it has split. Then use a knife to cut any large pieces into smaller ones.
  5. Transfer the smacked cucumber to a bowl along with the lime juice, soy sauce, chilli oil, maple syrup and garlic.
  6. Cut the baguette in half and add some chopped lettuce leaves to the bottom half, followed by the satay tofu, smacked cucumber and finish with some sriracha. Add the top half of the baguette and cut into 4.

Of course, fried foods in oil is great for the taste buds but the information on health warns about
the free radicals it creates and is hard on the body….high heat on foods creates glycation which also
a cause of body issues. Sometimes might be alright but still damaging to some degree. I faced
a difficult health crisis years ago so have to take care. If there is any way to copy the taste of fried
foods, I’m all in!

Thanks Yara! The peanut butter is 3 tablespoons and it doesn’t need to be super accurate, so you can simply use a dessert spoon if you have one. Hope that helps.
